Rosemary Chicken and Roasted Potatoes

Here's a recipe that I just made up myself and it is really good!!  I make it a lot because it is so easy.  I made it today!

Here's how!

Ingredients:
  • Chicken pieces (I usually use thighs 'cause they're my favorite but you can use whatever you like)
  • Olive oil
  • Seasoning (I just use salt, pepper and garlic powder)
  • Fresh rosemary (two sprigs should do it!)
  • Red potatoes, quartered (I used 5)
Drizzle two teaspoons of olive oil in the bottom of a baking dish.
Season the chicken and layer them at the bottom of the dish.
Position the quartered potatoes around the chicken.
Top everything with some rosemary.
Bake at 350 for an hour.

Yum!!!

If you're using chicken with skin like these plump little thighs, you can tuck some rosemary under the skin for extra flavor.  That's what I do and they turn out great.  

I'm SO proud of that rosemary I used today 'cause it's some I grew myself!

    I went to a local farm I found on the internet today, but it wasn't really a good one. Didn't really have much of anything; said his crops didn't really "come out well" this year. Is that one in Byron really good? I'm looking for one with a large variety of vegetables....love the option to "pick your own" at certain farms. There are a lot of blueberry farms around here and some that have blackberies and apples that we are going to visit this week, but I'm still looking for a good one for the vegetables.
    Way to go growing your own rosemary! Rickey is growing a topsy turvy tomato plant and a red bell pepper plant. I'm so proud. This is our first time. :)

  3. Thanks!! The little farmer's market I go to is called Sasnett's and it's on 41 between Byron and Centerville. It's okay for just me. There's one in Cordele (straight down 75) that's huge and awesome!! Sasnett's has peas ($28 a bushel, shelled, which I thought was scandalous!!!) and tomatoes and plums and yellow squash and red potatoes and red and green peppers, that kind of thing. Let me know how the topsy turvy does and how many maters you get off it. I wanted to get me one but I was afraid it was a scam. Ha!
